Fruit Cocktail Cake

This is from the Yankee Church Supper Cookbook. How simple is this!!

Serves: 8-12

Ingredients

  • 1  cup flour
  • 1  cup sugar
  • 1  teaspoon baking soda
  • 14 teaspoon salt
  • 1  egg, beaten
  • 1  teaspoon vanilla
  • 2  cups  fruit cocktail, drained and 1/2 cup syrup reserved
  • 34 cup brown sugar
  • 12 cup  nuts, chopped

Directions

  1. In a large bowl, combine flour, white sugar, baking soda and salt.
  2. Add egg, vanilla, fruit cocktail, and syrup; beat well.
  3. In a greased 9X13-inch pan, pour batter and spread the brown sugar and nuts evenly on top.
  4. Bake at 350 degrees (if using glass pan, 325 degrees) for 1 hour.
  5. Top with ice cream or whipped cream.
