Fruit Cobbler Crumb Cake

Ingredients
- 4 cups fruit, of choice prepared as necessary (peeled, cored, etc.)
- 1 1⁄2 cups sugar
- 2 teaspoons cinnamon or 2 teaspoons nutmeg, if desired
- 4 cups baking mix, reserve 1 cup
- 2 cups milk
- 2 eggs
- 3 tablespoons shortening, melted
- 3 tablespoons dark brown sugar
- 2 tablespoons butter or 2 tablespoons margarine
Directions
- Prepare fruit as necessary and set aside.
- Grease well a deep disposable aluminum baking dish (10" - 13" x 8").
- Preheat oven to 400°F.
- Mix fruit lightly with 1 1/2 cups sugar and spice. Pour into prepared baking dish.
- Mix 3 cups of boxed baking mix with milk, eggs, and shortening. Pour over top of fruit.
- Sprinkle reserved 1 cup of baking mix over the mix in the baking dish.
- Sprinkle brown sugar over all, then dot with butter.
- Bake at 400F for 15 minutes, reduce heat to 350F and bake another 20 minutes or until fruit is tender and dough is firm.
