Fruit and Ice Cream Puddings

Serves: 6
Ingredients
- 350 g plum pudding
- 2 liters ice cream, softened
- 1 cup pouring custard
Directions
- Slice pudding into 1 cm thick slices.
- Use an egg ring to cut each slice into a 7 cm circle.
- Spoon 2 tblsp ice cream into base of 6 x 1/2 cup moulds.
- Top with piece of pudding.
- Cover with another 2 tblsp of ice cream
- Smooth with spatula.
- Freeze 4 hours.
- Spoon a little custard onto each plate.
- Invert pudding onto custard.
- Top with berries, serve immediately.
