Frozen Lemon Squares

Serves: 6-9
Ingredients
- 1 1⁄4 cups graham cracker crumbs
- 1⁄4 cup sugar
- 1⁄4 cup butter or 1⁄4 cup margarine, melted
- 1 (14 ounce) can eagle brand sweetened condensed milk
- 3 egg yolks
- 1⁄2 cup lemon juice concentrate
- yellow food coloring (optional)
- whipped cream or Cool Whip Topping
Directions
- Preheat oven to 325°F In small mixing bowl, combine crumbs, sugar and butter; press firmly on bottom of 8 or 9-inch square pan.
- In small mixing bowl, beat Eagle Brand, egg yolks, lemon juice and food coloring, if desired. Pour into crust.
- Bake 30 minutes. Cool completely. Top with whipped cream. Freeze 4 hours or until firm. Let stand 10 minutes before serving. Garnish as desired. Freeze leftovers.
