Frosty Sherbet Sandwiches for 2

Pineapple slices topped with ice cream and toppings.

Ingredients

• 1 (8 ounce) can pineapple slices, drained
• 1  scoop  Orange sherbet or 1  scoop vanilla ice cream
•  apricot preserves
•  sliced  roasted almonds

Directions

1. Place 1 pineapple slice on each dessert plate; top each with a scoop of sherbet. Cut 1 side of each remaining pineapple slice, twist and place on sherbet. Drizzle preserves on each serving; sprinkle with almonds.
