Frosty Sherbet Sandwiches for 2

Ingredients
- 1 (8 ounce) can pineapple slices, drained
- 1 scoop Orange sherbet or 1 scoop vanilla ice cream
- apricot preserves
- sliced roasted almonds
Directions
- Place 1 pineapple slice on each dessert plate; top each with a scoop of sherbet. Cut 1 side of each remaining pineapple slice, twist and place on sherbet. Drizzle preserves on each serving; sprinkle with almonds.
