Frosted Cashew Cookies

Ingredients
- 1⁄2 cup butter
- 1 cup brown sugar
- 1 egg
- 1⁄2 teaspoon vanilla
- 2 cups flour
- 3⁄4 teaspoon baking soda
- 3⁄4 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1⁄3 cup sour cream
- 1 3⁄4 cups cashews
FROSTING
- 1⁄2 cup butter
- 1⁄4 teaspoon vanilla
- 3 tablespoons liquid coffee creamer
- 2 cups powdered sugar
Directions
- Preheat oven to 350°F.
- Cream butter and brown sugar together, add egg and vanilla; mix well.
- Sift the dry ingredients together and add to creamed mixture.
- Add sour cream and cashews.
- Drop the cookies by teaspoons onto the baking sheet and flatten cookies slightly.
- Bake for ten minutes, or golden.
- For frosting: lightly brown butter.
- Mix in the vanilla, liquid coffee creamer and powdered sugar, adding a little more powdered sugar if needed for spreading consistency.
- Frost cookies when cooled.
