Fried Rice W/ Vegetables

Serves: 4-5
Yields: 5-6 Cups
Ingredients
- 1⁄4 cup light soy sauce
- 3 tablespoons red wine
- 1⁄2 teaspoon salt
- 6 tablespoons oil
- 1 teaspoon garlic powder (or substitute salt and garlic powder for Garlic salt)
- 2 eggs, lightly beaten
- 1 cup frozen peas and carrot
- 1 bell pepper, chopped
- 4 cups rice, cooked and cooled
Directions
- Mix the first three ingredients in small bowl.
- Heat a small skillet over medium heat, then add 2 Tablespoons of the oil and the lightly beaten eggs. Cook till eggs are moist.
- Place wok over medium heat, let the wok heat up, then add the rest of the oil and garlic powder. Stir briefly.
- Add the Frozen veggies and the pepper, then stir fry for one minute.
- Add the rice and eggs and Stir fry an additional 5-6 minutes.
- Add Sauce and mix well.
- Serve Hot.
