  1. Crush the garlic with the salt and mix well with the lemon juice.
  2. Melt the butter in a large frying pan.
  3. Add the garlic mixture.
  4. As the butter begins to color, slide in the eggs(previously broken into a bowl)and fry gently.
  5. Crush the dried mint and sprinkle over the eggs.
  6. Cover pan briefly to set yolks.
  7. When eggs are set, sprinkle lightly with salt and serve immediately.
