Fresh Whole Cranberry Sauce

Yields: 2 cups
Ingredients
- 1 1⁄2 cups sugar
- 3⁄4 cup water
- 2 whole cinnamon sticks
- 3 whole allspice or 1⁄4 teaspoon ground allspice
- 3 whole cloves or 1⁄4 teaspoon ground cloves
- 12 ounces whole fresh cranberries, rinsed
- zest of one orange
Directions
- If using whole allspice and cloves, securely wrap them up in cheesecloth so it's easy to retrieve later. If using ground spices, bring water, sugar and spices to a boil in medium saucepan until sugar has dissolved and mixture is syrupy. Add whole cranberries and when they just begin to pop remove from flame. Add grated orange zest and refrigerate at least one hour.
