Fresh Vegetable and Bean Tostada

Ingredients
- 1 1⁄2 cups corn kernels, fresh roasted
- 1 cup grape tomatoes, halved
- 1 garlic clove, minced
- 1 avocado, diced
- 2 tablespoons cilantro, fresh diced
- 2 scallions
- 2 limes
- 1 cup black beans, rinsed and drained
- 1 jalapeno, diced with seeds removed
- 1 tablespoon olive oil
- salt
- pepper
- 4 tostadas
Directions
- Mix together all ingredients except the tostada shells. Season to taste.
- Serve on top of your favorite tostada shell.
- Enjoy!
