Fresh Tomato Tartar Sauce

This is the first tartar sauce I liked. This has the taste of tomatoes and jalapenos mixed in with good quality mayonnaise. This recipe comes from Simply Elegant, a cookbook from the Windsor Court Hotel in New Orleans. This is a lovely accompaniment to crab cakes, fresh fish, or fried duck. Show more

Serves: 12-14

Yields: 3 cups

Ingredients

  • 2  fresh tomatoes, peeled, seeded, and finely chopped
  • 2  fresh jalapeno peppers, stemmed, seeded, and finely chopped
  • 12  cornichons, finely chopped
  • 2  tablespoons capers, finely chopped
  • 14 medium onion, peeled and finely chopped
  • 2  cups mayonnaise (use Hellman's or homemade)
  • 2  lemons, juice of

Directions

  1. Combine all the ingredients in a medium bowl.
  2. Cover and refrigerate for 1 hour before serving.
  3. Any leftover sauce may be stored, covered, in the refrigerator for up to 3 months.
