Ingredients
- 3 medium tomatoes, cubed
- 2 celery ribs, chopped
- 2 carrots, chopped
- 1 small cucumber, chopped
- 1⁄2 cup parsley, chopped
- 1⁄2 cup canned chick-peas, drained and rinsed
- salt, to taste
- black pepper, to taste
- 1 lemon, juiced
- 1 tablespoon extra virgin olive oil
Directions
- Mix all ingredients together and let sit in refrigerator for 1 hour.
