Fresh Tomato and Garlic Penne for Two

Ingredients
- 2 teaspoons olive oil or 2 teaspoons vegetable oil
- 2 garlic cloves, finely chopped
- 6 medium plum tomatoes, coarsely chopped (Roma)
- 1 1⁄4 cups uncooked penne pasta or 4 ounces penne pasta
- 1 tablespoon chopped fresh basil leaf
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon fresh ground pepper
Directions
- Cook and drain pasta as directed on package, omitting salt.
- Meanwhile, in 10-inch skillet, heat oil over medium-high heat. Cook garlic in oil 30 seconds, stirring frequently. Stir in tomatoes. Cook 5 to 8 minutes, stirring frequently, until tomatoes are soft and sauce is slightly thickened. Stir in basil, salt and pepper. Cook 1 minute. Serve sauce over pasta.
- Optional - Add chicken to this pasta dish. After cooking the garlic, add about 1/2 pound cubed boneless skinless chicken; cook until no longer pink in center.
