Fresh Sweet Potato Pie

Ingredients
- 3 large sweet potatoes
- 1⁄2 cup butter
- 3 eggs, beaten
- 2 cups sugar
- 12 ounces evaporated milk
- 1 1⁄2 tablespoons cornstarch
- 1 teaspoon vanilla
- 1 teaspoon lemon flavoring
- 3 pie crusts
Directions
- Peel sweet potatoes, then boil them whole; drain water.
- Mash potatoes with butter.
- Add eggs and milk. Combine sugar with cornstarch; add to potato mixture. Finally, add vanilla and lemon flavoring.
- Pour into pie shells.
- Bake at 350 degrees until nice and firm. This depends on your oven. Mine takes about 40-45 minutes.
- Makes 3 pies.
