Fresh Summer Watermelon Salsa

Ingredients
- 3 cups seedless watermelon, chopped in small pieces
- 1⁄2 medium onion, chopped (purple or white)
- 1⁄2 chopped bell pepper (green or yellow)
- 1 tablespoon seeded and chopped fresh jalapeno pepper
- 2 tablespoons chopped cilantro leaves
- 2 tablespoons lime juice
- 1 teaspoon vegetable oil
Directions
- Gently mix all ingredients together in a medium bowl. Cover and refrigerate 1 hour to allow flavors to blend together. ENJOY.
