Fresh Peach Cobbler

Ingredients
Dough
- 1 1⁄2 cups all-purpose flour
- 1⁄4 teaspoon salt
- 1⁄2 cup cold butter, cut into bits
- 1⁄4 cup ice water
- 12 peaches, peeled and cut into thick slices
- 1 tablespoon fresh lemon juice
- 1⁄2 teaspoon almond extract (or vanilla, in a pinch. The almond is nicer.)
- 1⁄2 cup sugar
- 1 teaspoon cinnamon
- 1⁄8 teaspoon grated nutmeg
- 2 tablespoons cold butter, cut into bits
Directions
- Make dough: Stir together flour and salt.
- Cut in butter until mixture resembles coarse meal.
- Stir in ¼ cup ice water and stir until dough just forms ball.
- Let dough stand at room temperature while making filling.
- Preheat oven to 350F and place rack in middle of oven.
- Toss peaches with lemon juice and almond extract and transfer to well-buttered 9 inch square baking dish.
- In a bowl, stir together sugar, cinnamon and nutmeg.
- Sprinkle evenly over peaches, top with butter.
- Roll dough out into 9 inch square on lightly-floured surface.
- Put dough on top of peaches.
- (if dough is crumbly, arrange over peaches in small sections) Bake for 40-45 minutes.
