Fresh Corn Relish

Yields: 4 pints
Ingredients
- 5 cups fresh corn kernels
- 2 cups finely-chopped onions
- 1 cup chopped red pepper
- 1⁄2 cup chopped green pepper
- 1 tablespoon dry mustard
- 2 tablespoons celery seeds
- 4 teaspoons salt
- 1 cup dark brown sugar
- 2 cups cider vinegar
Directions
- Place all ingredients in a stainless steel or enameled saucepan (do not use aluminum) and bring to a boil over high heat, stirring occasionally.
- Reduce heat, cover partially and simmer 20 minutes.
- Ladle into hot, sterilized jars to 1/8-inch of the top, seal.
