French Toast Stuffed With Brie With Pecan Syrup

Ingredients
- 6 slices , french baquette sliced diagonally, about 1-inch thick
- 2 eggs
- 1 cup milk
- 1 pinch salt
- 1 pinch cinnamon
- 1⁄4 teaspoon vanilla extract
- 6 slices brie cheese
- 1 cup real maple syrup
- 1⁄8 cup toasted pecans, broken into small pieces
- 1⁄8 cup diced banana
- 1⁄2 cup strawberry (topping)
- 1 cup fresh whipped cream (topping)
Directions
- Combine maple syrup, pecans and bananas and warm over low heat.
- In a shallow baking dish, beat the eggs then add in the milk, salt, cinnamon and vanilla.
- Make a slit in each slice of bread big enough for the brie to fit into, but do not cut all the way through.
- Place the brie slices into the opening.
- Dip the bread into the egg mixture and place on hot griddle.
- Cook until browned on bottom, then flip and cook until browned on the other side.
- After both sides are browned, transfer 3 pieces to individual serving plates. Top with whipped cream and fresh berries.
- Serve with warm maple syrup mixture.
