French Style Sauce

Yields: 2 cups

Ingredients

  • 13 cup  chicken stock
  • 13 cup dry red wine
  • 12 lb mushroom, sliced
  • 12 cup  jarred  white pearl onion, drained
  • 1  teaspoon dried thyme
  •  minced parsley (to garnish)

Directions

  1. Heat chicken stock and wine to boiling. Add mushrooms, reduce heat and simmer until mushrooms are wilted, about 5 minutes.
  2. Stir in onions and thyme; cook uncovered, about 5 minutes. Spoon over chicken. Garnish with parsley.
