French-style Chicken with Garlic

Directions

  1. Preheat oven to 375 degrees.
  2. Heat butter and oil in a pan.
  3. Place chicken skin side down and fry until browned.
  4. Transfer to a plate.
  5. Drain fat from pan and add onion and garlic.
  6. Cook until lightly browned, stirring frequently.
  7. Add wine, stock and bring back to a boil.
  8. Place mixtures into a casserole dish (with a lid) then add chicken and herbs.
  9. Cover and bake for 25 minutes.
  10. Or until it is tender and juices run clear when pierced.
  11. Remove chicken pieces to a serving platter.
  12. Strain liquid and discard herbs.
  13. In a blender puree the solids (onion and garlic) until smooth.
  14. Remove any fat from the liquid.
  15. Combine liquid and puree again and reheat.
  16. Pour over chicken and serve.
