  1. In a large bowl, whisk together eggs, milk, salt and pepper. Stir in sourdough bread, bacon (about 12 slices), spinach (excess water squeezed out), onion, chives, mustard, and 2 cups cheese. Spread mixture evenly in 13x9 baking dish coated with cooking spray and top with remaining cheese. Cover and chill 8 hours or overnight.
  2. Preheat oven to 375 degrees. Uncover and bake casserole until puffed and golden brown, about 1 hour 15 minutes. Let cool 15 minutes.
