French Onion Soup

I don't like my Onion Soup too dark and beefy so I use a combo of beef and chicken broth. This is super easy and super fast. Take your time browning the onions. If the heat is too high they will burn instead of turning golden. Show more

Directions

  1. Slice onions as thinly as possible.
  2. Melt butter and oil over low heat in large dutch oven or soup pot.
  3. Brown onions slowly until golden brown. This step should take 20-30 minutes.
  4. Sprinkle with flour, cook and stir 2-3 minutes.
  5. Add broths and bouillon cube.
  6. Simmer partially covered for 45 minute.
  7. Top with toasted french bread and Swiss cheese and melt under broiler.
