French Onion Soup

Ingredients
- 4 cups onions (we use yellow onions)
- 3 garlic cloves
- 1 teaspoon extra virgin olive oil
- 1⁄2 teaspoon sea salt
- 1⁄4 teaspoon black pepper
- 4 cups beef broth
- 2 tablespoons balsamic vinegar
- 4 slices French bread (we use home made rye bread)
- 6 slices provolone cheese
Directions
- Cut the onions in half, then then slice into thin ribbons. Do the same with the garlic cloves.
- Using medium heat with a covered fry pan, add the olive oil, the onions and the garlic slices, salt and pepper and saute until caramelized, DO NOT BURN! This will take between 30 to 45 minutes to achieve the caramel color and sweetness. Add the beef broth and vinegar and bring to a boil and simmer @ 10 minutes.
- Slice the bread into @1/2 inch thick slices and toast to medium-dark, cut into 1/2 inch croutons. Fill oven proof bowls, or large coffee cups 3/4 full, add the croutons and 1 slice of provolone cheese. Broil until the cheese bubbles and melts. I use the next to top rack in the oven so that nothing burns.
