French Moroccan Bean Croquettes

Found on the web. I love beans and croquettes sounds like a keeper.

Yields: 8 balls

Ingredients

  • 800  g dried fava beans, drained and rinsed
  • 2  eggs, beaten
  • 1  bunch green onion, finely chopped
  • 4  tablespoons  chopped herbs (sage, parsley or thyme)
  • 50  g feta, crumbled
  • 4  tablespoons flour
  • 50  g  breadcrumbs
  • 2  tablespoons olive oil
  •  salt and pepper

Directions

  1. Put the beans in the bowl of a food processor blender
  2. and mix until smooth and set aside almost smooth.
  3. Add half the beaten eggs and mix again.
  4. Stir in green onions, herbs and feta.
  5. Salt and pepper to taste.
  6. Shape the mixture into 8 balls and flatten them slightly from the palm of your hand. Coat the cakes with flour, beaten egg and then breadcrumbs.
  7. Place them on an oiled baking sheet and sprinkle them with a little oil.
  8. Brown them in the oven preheated to 200 ° C / Therm. 6
  9. (10-15 minutes).
