French Fresh Peach Pie

A delicious and refreshing pie from my Lions club cookbook. Chilling time is cooking time.

Serves: 6

Ingredients

  • 1  baked  pie shell (8-inch)
  • 4  cups  sliced  peaches
  • 13 cup water
  • 12 cup sugar
  • 5  teaspoons cornstarch, heaping
  • 1  tablespoon lemon juice

Directions

  1. Add water to 2 cups peaches and soak slightly until peaches are soft.
  2. Add sugar mixed with cornstarch.
  3. Cook 5 minutes.
  4. Add lemon juice and set aside to cool.
  5. Place remaining 2 c peaches in pie shell and top with peach mixture.
  6. Chill for 4 hours.
  7. Serve topped with ice cream or whipped cream.
