French Chicken

Ingredients
- 1 lb boneless skinless chicken breast
- 2 tablespoons butter
- 1 cup mushroom, chopped
- 1⁄4 cup parsley, chopped
- 1⁄2 cup tomatoes, chopped
- 3⁄4 cup whipping cream
- 3 ounces mozzarella cheese, shredded (Monterey Jack works well too)
- salt & pepper
Directions
- Lightly flour chicken breast halves. Sprinkle with salt & pepper. Brown chicken lightly in melted butter. Put meat in greased baking dish. Top with mushrooms, parsley, tomatoes & cream.
- Bake covered at 350 deg for 45 minutes. Uncover. Top with cheese & bake until cheese melts- about 10 minutes.
