Four Bean Chilli

Ingredients
- 2 teaspoons olive oil
- 2 celery ribs, finely chopped
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1⁄2-1 teaspoon ground chili powder, depending on taste
- 2 (400 g) cans chopped tomatoes
- 2 (400 g) cans four-bean mix
- 1 tablespoon lime juice
- sour cream, to serve
- chopped coriander, to serve
Directions
- Heat oil, cook celery and onion.
- Cook about 6 minutes till soft.
- Add garlic and chilli, cook 2 minutes.
- Add tomatoes and beans, bring to boil.
- Simmer 20 minutes, add lime juice.
- Add salt and pepper to taste.
- Serve with sour cream and chopped coriander on top.
