Yields: 8 servings of vegetables

Ingredients

  • 2  apples, sliced thin, CORES REMOVED
  • 1  head romaine lettuce, torn into bite-sized pieces or 6  cups  mixed  spring greens
  • 3  mushrooms, sliced thin (optional)
  • 14 red onion, sliced thin (optional)
  • 12 cucumber, sliced into coins (optional)
  • 12 cup  roasted  salted sunflower seeds or 12 cup walnuts or 12 cup pecans
  • 12 cup feta cheese or 12 cup  goat cheese, crumbled
  • 2  tablespoons extra virgin olive oil
  • 1  tablespoon  balsamic vinegar

Directions

  1. Slice up all vegetables and tear lettuce into small pieces. Toss together in a large bowl.
  2. Top with nuts and cheese.
  3. In a small cup, mix the oil and vinegar.
  4. Dress the salad JUST before serving by adding 1/2 of the dressing, mixing well, tasting, and adding more if needed.
