Fondant Potatoes

Ingredients
- 5 small potatoes
- 1 tablespoon olive oil
- 1 liter stock
- 10 g butter
- 1 teaspoon dried sage
- 1 teaspoon pureed garlic
- seasoning
Directions
- Peel and trim the potatoes into a column or barrel shape.
- Heat the olive oil in a large sauce pan and brown both ends of the potatoes.
- Add the stock, butter, garlic and sage and bring to the boil. The stock should virtually cover the potatoes.
- Season and simmer for 40 minutes or until the potatoes are cooked through.
