Fluffy Scrambled Eggs

Serves: 4

Yields: 2 cups

Ingredients

  • 8  eggs
  • 1 (5 ounce) can evaporated milk (I used low fat and it worked just fine..)
  • 2  tablespoons butter
  •  salt and pepper

Directions

  1. In a bowl, whisk the eggs and the milk.
  2. In a large skillet, heat the butter until hot.
  3. Add egg mixture; cook and stir over medium heat until eggs are completely set.
  4. Season with salt and pepper.
