Fluffy Horseradish Sauce

A lovely sauce with roast beef any way...sandwiches, roast, etc. From The United States Regional Cookbook, Culinary Institute of Chicago, 1947. Chilling time not included in preparation time.

• Yields: 3/4 cup

Ingredients

• 1⁄4 cup  grated horseradish
• 1 1⁄2 tablespoons vinegar
• 1⁄3 teaspoon salt
• 1⁄8 teaspoon cayenne
• 1⁄3 cup heavy cream, whipped

Directions

1. Combine first four ingredients and chill.
2. Just before serving, whip cream and fold in horseradish mixture.
