Flax and Fiber Loaf

Ingredients
- 1 teaspoon honey
- 2 1⁄4 teaspoons dry active yeast (1 envelope)
- 1 cup water, lukewarm
- 1⁄4 cup canola oil or 1⁄4 cup flax seed oil
- 1 teaspoon salt
- 1 1⁄2 cups whole wheat flour
- 1⁄2 cup ground flax seeds
- 1⁄4 cup natural bran
- 1⁄4 cup all-purpose flour, more if needed (you may need another 1/4 cup for kneading)
Directions
- In a large bowl stir the honey and yeast into the water, and set aside for 10 minutes.
- In a seperate bowl combine the flours, bran and flax seeds.
- After 10 minutes mix the oil and salt into the yeast mixture, then add the 3/4 flour mix and blend with a fork until smooth.
- Turn the dough onto a floured work surface and work in the remaining flour mix.
- Knead, until you have smooth, springy dough, 10 to 15 minutes.
- Cover with a tea towel and set in a warm place to rise to double, about 45 minutes.
- Punch the dough down, shape and place in loaf pan.
- Let rise again 30 minutes and bake at 400ºF/200ºC for 25 minutes until done.
- For an extra touch brush the loaf with an omega-3 egg yolk/milk wash and sprinkle with flax seeds before you bake it.
- Let the bread cool a little before slicing to serve.
