Flank Steak with Mushroom Ceviche

A wonderful salad.Light and easy to make.

  1. In a mixing bowl, toss mushrooms, citrus juices and olive oil.
  2. Let stand for 1HR, tossing occasionaly.
  3. Add the onion,bell pepper,garlic, cilantro, salt& pepper and mix well.
  4. Refrigirate a couple of hours.
  5. Grill the flank steak for approx 7 minutes per side (med. rare).
  6. Let stand for 5 minutes, then slice thinly on the diagonal.
  7. Place mixed greens on plate, top with mushroom mixture, then place steak slices on top.
