Flank Steak With Charred Tomato Sauce

Ingredients

  • 1 12 lbs  flank steaks
  •  salt & pepper
  • 3  garlic cloves, in there skin
  • 2  tablespoons olive oil
  • 3  stems of cherry vine tomatoes
  • 14  a bunch fresh parsley, finely chopped
  •  zest and juice of a lemon
  • 14 cup  balsamic vinegar

Directions

  1. Season steak on both sides with salt 20 minutes before grilling.
  2. Turn grill to high heat, drizzle the steak with olive oil and cook turning every 15 seconds for 2-3 minutes or until it springs back slowly when touched, allow to rest, season with pepper.
  3. For the tomatoes, drizzle them and garlic with olive and cook on the grill for 1-2 minutes or until jammy and charred.
  4. Remove tomatoes stem and place in a bowl, squeezing the garlic flesh inches Give it a mash with a fork before mixing with parsley, zest and juice of lemon and balsamic vinegar. Season with salt and pepper.
  5. To serve slice steak against the grain and serve with dollops of the charred tomato sauce .
