Fix Ahead Mashed Potatoes Casserole

My cousin shared this recipe with me. Great side dish when having guests and goes well with any menu. May be refrigerated and baked later. Show more

  1. Slice potatoes thin. Boil in water using 1/2 teaspoon salt until tender. Drain and mash. (May use electric mixer).
  2. Add butter, cream cheese, sour cream, milk and salt. Mix well.
  3. Place mixture in a greased 2 quart casserole dish. Brush top with melted butter and sprinkle with paprika.
  4. Bake or refrigerate. If refrigerated, let stand 30 minutes before baking in a 350 degree oven for 30 minutes. (Last 5 minutes of baking time may sprinkle 1/2 cup of shredded cheddar cheese on top.).
