Fix Ahead Mashed Potatoes Casserole

Ingredients
- 5 medium white potatoes
- 1⁄2 teaspoon salt
- 2 tablespoons butter
- 2 (3 ounce) cream cheese
- 2⁄3 cup sour cream
- 1⁄4 cup milk
- 3⁄4 teaspoon salt
- 1 tablespoon butter, melted
- 1⁄2 teaspoon paprika
Directions
- Slice potatoes thin. Boil in water using 1/2 teaspoon salt until tender. Drain and mash. (May use electric mixer).
- Add butter, cream cheese, sour cream, milk and salt. Mix well.
- Place mixture in a greased 2 quart casserole dish. Brush top with melted butter and sprinkle with paprika.
- Bake or refrigerate. If refrigerated, let stand 30 minutes before baking in a 350 degree oven for 30 minutes. (Last 5 minutes of baking time may sprinkle 1/2 cup of shredded cheddar cheese on top.).
