Easy and economical and sure to please all the hillbillies in your family as much as it pleases the hillbillies in our family. Give it a try. Ready In: 11 hrs 30 mins

Serves: 8-10

Yields: 1 possum stew

Ingredients

  • 5  lbs  possum, removed from your high beams, skinned and dressed or 5  lbs  pork roast, browned on all sides
  • 1  onion, sliced
  • 1  fennel bulb, sliced
  • 2  garlic cloves, quartered and stuffed into possum
  • 5  lbs potatoes, fingerlings
  • 4  carrots, chunked
  • 4  celery ribs, chunked
  •  salt and pepper
  • 1  bouquet garni
  • 1 14 ounces  onion soup mix
  • 3  cups water

Directions

  1. Place all ingredients into the crockpot and set on high for 5 hours and then on low for 5 more hours.
  2. Serve with biscuits or corn bread. Mmmmmm.
