Ingredients
- 5 lbs possum, removed from your high beams, skinned and dressed or 5 lbs pork roast, browned on all sides
- 1 onion, sliced
- 1 fennel bulb, sliced
- 2 garlic cloves, quartered and stuffed into possum
- 5 lbs potatoes, fingerlings
- 4 carrots, chunked
- 4 celery ribs, chunked
- salt and pepper
- 1 bouquet garni
- 1 1⁄4 ounces onion soup mix
- 3 cups water
Directions
- Place all ingredients into the crockpot and set on high for 5 hours and then on low for 5 more hours.
- Serve with biscuits or corn bread. Mmmmmm.
