Fish Fillet Sandwich

Yields: 4 sandwiches

Ingredients

  • 4  grouper  fish fillets
  • 2 12 teaspoons  old bay with  garlic and herb seasoning
  • 2 12 teaspoons  old bay  cajun seasoning
  • 1 12 teaspoons salt
  • 1 12 teaspoons black pepper
  • 4  tablespoons light mayonnaise
  • 4  slices  american  white cheese
  • 12 lemon, juiced
  • 1  large tomatoes, sliced thin

Directions

  1. Mix 2 tsp of each Old Bay seasonings, 1 tsp salt, and 1 tsp pepper in a small bowl.
  2. Set aside.
  3. Season both sides of fish fillets with the remaining seasonings left in the bowl.
  4. Mix mayo and remaining seasonings and the lemon juice.
  5. Set aside.
  6. Grill fish on a George Foreman grill, panini maker or griddle til done. About 4 minutes in a Foreman grill.
  7. Put sandwiches together by layering the fish, cheese, tomato and mayo mixture when the fish is cooked.
