Fired-Up Green Onion Pancakes

Ingredients
- 1 1⁄4 cups warm water
- 1 (8 ounce) package active dry yeast
- 1 teaspoon sugar
- 4 1⁄4 cups all-purpose flour
- 12 green onions, chopped (about 1-1/3 cups)
- 1 tablespoon olive oil
- 1 tablespoon sesame oil
- 2 teaspoons salt
- 1 teaspoon ground black pepper
Directions
- In 2-cup glass measuring cup, mix warm water with yeast and sugar, let stand until yeast mixture foams, about 5 minutes.
- In large bowl, with wooden spoon, combine 1-1/2 cups flour with green onions, olive oil, seseme oil, salt, pepper, and yeast mixture until blended.
- Gradually stir in 2-1/2 cups flour.
- With floured hand, knead mixture in bowl to combine.
- Turn dough onto lightly floured surface.
- Knead 10 min until smooth and elastic, working in more flour (1/4 cup) if necessary.
- Shape into a ball and place in greased large bowl turning dough over to grease top.
- Cover and let rise in warm place until doubled, about 1 hour.
- Punch dough down.
- Turn dough onto lightly floured surface.
- Cover and let rest 15 minutes.
- Shape dough into 6 balls.
- With hand firmly press each ball into an 8-inch round.
- Place 3 rounds on grill over medium heat.
- Grill 2-3 minutes, until grill marks appear and dough stiffens.
- Turn and grill 2-3 min on opposite side.
- Repeat with remaining dough.
- To serve, cut into 6 wedges.
