Fillet of Flounder Au Gratin

From "The American Woman's Cookbook", 1938-1977. The book I got this from is so old it has recipes for squirrel! But this fish recipe is completely delicious, and easy too. I serve this with pasta in butter/garlic sauce and boiled greenbeans. Show more

Directions

  1. Arrange fish in a greased baking dish.
  2. Melt the butter.
  3. Stir in flour, onion flakes & basil. Cook until it starts to bubble.
  4. Add chicken broth. Cook 5-10 minutes more, stirring constantly.
  5. Add lemon juice + pepper.
  6. Pour sauce over fish. Sprinkle with bread crumbs.
  7. Bake at 425 for 20 minutes.
