  1. Preheat grill to medium-high heat.
  2. Season steaks with S&P and drizzle with olive oil.
  3. Grill to doneness ~5 mins per side for med-rare.
  4. Melt 2 tablespoons butter in large pan over med-high eat.
  5. Add onions and saute until tender ~5mins.
  6. Salt.
  7. Add garlic and oregano, saute until fragrant ~30sec.
  8. Stir in tomate paste, cook for 2 mins, stirring constantly.
  9. Whisk in wine, simmer until reduces by half ~10mins.
  10. Strain into bowl, removing solids, return to pan and bring to simmer.
  11. Add 4 tablespoons to sauce and whisk in little by little.
  12. Season to taste with S&P.
