Fig Pound Cake

I love nibbling on dried figs. Found this recipe in an old cookbook and thought, why not. Must say I substituted half of the butter for applesauce to cut down on fat. Show more

Directions

  1. Preheat oven to 350°F.
  2. Butter and flour an 8 x 4 x 2-inch loaf pan.
  3. Sieve flour, cornmeal vanilla sugar and salt in a bowl.
  4. Put butter in a bowl and beat.
  5. Slowly add the sugar; blend well.
  6. Add eggs to butter mixture, two at a time, and beat until light.
  7. (If you use applesauce, add it in between the eggs).
  8. Add flour mixture alternately with milk.
  9. Beat until smooth.
  10. Stir in figs and nuts.
  11. Spoon into greased loaf pan.
  12. Bake about 45 minutes, or until a wooden pick comes out clean when inserted in the center.
  13. Cool on a rack.
