Fig Nectar

A delicious way to use up any extra figs you may have. From the US Regional Cookbook, Chicago Culinary Arts Institute, 1947. You'll need a large crock or reactive resistant pan to make this lovely brew. Show more

Yields: 2 ounce

Ingredients

  • 6  lbs figs
  • 2 12 teaspoons  yeast
  • 3  gallons water
  • 7  lbs sugar

Directions

  1. Force figs through a meat chopper or food processor.
  2. Mix yeast with the water, add figs and sugar.
  3. Cover lightly with a teatowel and let stand at room temperature for 12 days, stirring once each day.
  4. Strain through cheesecloth and bottle.
  5. Keep in a cool place.
