Fiesta Bread (Savory Monkey Bread)

A co-worker described this bread, saying she made it often years & years ago. It took awhile for me to locate the recipe, but I made it for a Cinco de Mayo potluck and found it quite tasty and easy. I adapted it to fit a 9x13 glass pan (original recipe called for an 8-inch cake plate). Show more

Ingredients

  • 20  frozen parkerhouse  rolls, thawed
  • 1  cup salsa
  • 2  cups  shredded cheddar cheese
  • 34 cup bell pepper, diced (red and green)
  • 3  green onions, diced
  • 1 (2 1/4ounce) can  sliced black olives, drained

Directions

  1. Place rolls in greased 9x13 pan to thaw and rise. (This takes about 3 hours straight from the freezer).
  2. Cut each roll in half and pile them in a large bowl or on a plate.
  3. Dip each piece of dough into salsa, then roll in cheese. Place each piece of bread dough back in greased 9x13 pan.
  4. Top with bell pepper, onions and olives.
  5. Bake at 375 F for 30 minutes.
  6. These are tasty hot or cold.
