Fettucini Carbonara

Ingredients
- 5 slices pancetta
- 1⁄3 cup heavy cream
- 1⁄4 teaspoon paprika
- 1 egg
- 1 egg yolk
- 3 ounces parmesan cheese
- 1 tablespoon butter
- 1⁄8 teaspoon pepper
- 250 g fettuccine
Directions
- 1.) Cut bacon into chunks.
- 2.) Fry until crisp.
- 3.) Drain off all but 2 tbsp bacon fat.
- 4.) Add cream and paprika, stir until combined.
- 5.) Place egg and egg yolk in a bowl with 1 oz of the cheesecheese whisk 'til combined.
- 6.) Cook fettucini in boiling salted water 10-12 minutes or until done.
- 7.) Drain, return to pot with butter until combined.
- 8.) Add bacon crem mixture, toss til combined.
- 9.) Add egg cheese mixture, toss 'til combined.
- 10.) Serve and sprinkle with remaining cheese.
