Fennel Pesto

Ingredients
- 1 tablespoon fennel seed
- 1 cup chopped fennel bulb
- 1⁄2 cup parsley
- 2 garlic cloves
- 1 ounce walnuts
- 3 tablespoons water
- 1 tablespoon olive oil
- 1⁄4 cup parmesan cheese, grated
Directions
- Place fennel seeds in small bowl. Pour hot water over to cover. Let stand 10 minutes, then drain.
- Process fennel, fennel seeds, parsley and garlic in a food processor or blender until finely chopped.
- Add walnuts, 3 tablespoons water and oil. Mix until walnuts are finely chopped.
- Stir in Parmesan cheese.
