Fennel & Orange Salad

A fine citrus salad adapted from an old Cooking Light.

• Serves: 6

Ingredients

• 3  cups fennel bulbs, sliced paper thin (about 1½ small bulbs)
• 3  cups bibb lettuce, torn
• 1 1⁄4 cups  orange sections
• 1⁄2 cup  fresh flat leaf parsley, loosely packed
• 1⁄3 cup  shaved parmesan cheese

• Vinaigrette

• 1  teaspoon  grated  orange rind
• 3  tablespoons  fresh orange juice
• 1  tablespoon white wine vinegar
• 1  tablespoon honey
• 1 1⁄2 teaspoons extra virgin olive oil
• 1⁄4 teaspoon salt, 1/8 tsp pepper
• 1  clove garlic, minced

Directions

1. Toss together fennel through cheese.
2. Whisk or shake together vinaigrette ingredients.
3. Drizzle vinaigrette over salad& toss gently.
