Fennel & Orange Salad

Ingredients
- 3 cups fennel bulbs, sliced paper thin (about 1½ small bulbs)
- 3 cups bibb lettuce, torn
- 1 1⁄4 cups orange sections
- 1⁄2 cup fresh flat leaf parsley, loosely packed
- 1⁄3 cup shaved parmesan cheese
Vinaigrette
- 1 teaspoon grated orange rind
- 3 tablespoons fresh orange juice
- 1 tablespoon white wine vinegar
- 1 tablespoon honey
- 1 1⁄2 teaspoons extra virgin olive oil
- 1⁄4 teaspoon salt, 1/8 tsp pepper
- 1 clove garlic, minced
Directions
- Toss together fennel through cheese.
- Whisk or shake together vinaigrette ingredients.
- Drizzle vinaigrette over salad& toss gently.
