Fennel Apricot Slaw

Serves: 6-8

Ingredients

  • 12 cup  plain  Greek yogurt
  • 14 cup mayonnaise
  • 3  tablespoons  white balsamic vinegar
  • 1  tablespoon honey
  • 1  tablespoon poppy seed
  • 1 12 teaspoons salt
  • 12 teaspoon black pepper
  • 3  fennel bulbs, white parts only, trimmed and thinly sliced
  • 1  cup  thinly sliced  dried apricot
  • 1  cup snow pea pods, sliced lengthwise

Directions

  1. Whisk together dressing ingredients.
  2. Add to fennel, apricots and snow peas as desired. Toss to coat.
  3. Serve chilled.
