Fennel Apricot Slaw

Ingredients
- 1⁄2 cup plain Greek yogurt
- 1⁄4 cup mayonnaise
- 3 tablespoons white balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon poppy seed
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon black pepper
- 3 fennel bulbs, white parts only, trimmed and thinly sliced
- 1 cup thinly sliced dried apricot
- 1 cup snow pea pods, sliced lengthwise
Directions
- Whisk together dressing ingredients.
- Add to fennel, apricots and snow peas as desired. Toss to coat.
- Serve chilled.
