Favorite Fried Salmon Cakes

Ingredients
- 1 (14 3/4ounce) can salmon
- 1 egg
- 1⁄3 cup onion, minced
- 1⁄2 cup flour
- 1 1⁄2 teaspoons baking powder
- 1 1⁄2 cups Crisco shortening
Directions
- Drain salmon, reserving juice. Mix salmon, egg & onion until sticky. Stir in flour. Mix baking powder & reserved juice; add to salmon mixture, mixing well. Fry in melted shortening until golden brown. Drain on layers of paper towels.
