Favorite Farm Muffins

Yields: 50 muffins
Ingredients
- 2 cups raisins
- 5 teaspoons baking soda
- 1 1⁄2 cups boiling water
- 1 cup butter, softened
- 1⁄2 cup oil
- 4 eggs
- 2 cups sugar
- 1 cup applesauce
- 2 cups quick-cooking oats
- 4 cups kellogg's brand bud cereal
- 5 cups flour
- 1 teaspoon cinnamon
- 2 teaspoons salt
- 1 quart buttermilk
- 1⁄2 cup chopped walnuts
Directions
- In a VERY LARGE bowl mix raisins and baking soda. Add boiling water and mix. Cool slightly and add remaining ingredients. Mix. Fill greased or paper lined muffin tins 1/2 to 3/4 full.
- Bake at 350 for 20-25 minutes. Makes 50+ muffins.
- NOTE: Batter may be kept covered in refrigerator for several weeks. (Mine doesn't last several weeks).
