Fatoosh (Middle Eastern Bread Salad)

As usual I eat at a restaurant then try to make the meal myself. Had this salad in Guelph yesterday at the Quebec Street Mall. Of course with out pita breads. It was marvelous!   1. Toast the pita breads and with a scissors, cut into bite sized pieces.
  2. Set aside.
  3. Toss lettuce, green onion, cucumber, tomatoes, parsley, garlic and mint in a large mixing bowl.
  4. Add lemon juice, olive oil and sumac.
  5. Toss.
  6. Add bread and then salt to taste.
  7. Best if allowed to chill for a few hours before serving.
  8. sumac is a maroonish colored middle eastern spice that can be found almost anywhere. It adds a nice color and flavor.
  9. It's not necessary, but a very nice touch to this recipe.
